Let me introduce myself. My name is Bill Noonan and I have been cooking Chili in competition for over 28 years. I am a “Lifetime” member of the International Chili Society. The first few years of competitive cooking were all about having fun and an excuse to have a “Beer or Two”. After a while, I realized that my Texas Style Chili Recipe wasn’t all that bad and I started concentrating on winning. I began to tweak my spices and adding a few more and before I knew it I had an award winning blend. I have won numerous Chili Cook-offs, including cooking in the International Chili Society World Championship, 6 times, qualifying for status of “Master Chili Cook”. I was also invited to the James Beard Invitational Chili Cook-off and lo-and-behold, I WON IT!! Now, I am a James Beard Award winner for “Best Chili Cook of The Year”!!!!
Don’t get me wrong, cooking Chili in competition is still fun and I have been know to still enjoy a “Beer or Two”. Even my Texas Style Chili likes to have a Beer in it once in a while, helps to build Character. You know the old saying, “If you are good at doing something and you love doing it, you should follow your dream”.
